Chicken Caesar Salad Wraps

My favorite in-between-class snack! The best part about these is that they are only four ingredients! All you need is romaine lettuce, chicken, tortillas, and your favorite caesar salad dressing. Personally, I love the brand Ken’s. These tortillas were a little bit too big but I made them work; you can use any tortilla you would like (corn or flour), but just make sure you don’t get them too big in size, other wise it can be a bit challenging to wrap.

Step 1: Thaw your chicken. Just place the chicken into a bowl of hot water for roughly 20 minutes or until thawed. Next, line a cookie sheet with foil and place your chicken on it. I like to season the chicken with some salt and pepper. You can use any chicken you would like; chicken breast is usually the easiest to cook, but I had some chicken thighs so that’s what I used. Pop this in the oven for about 30-40 minutes on 375°F. If you’re using chicken breast, you can cook it quicker in a pan on the stove; just cook each side for about 4 minutes on medium/high heat.

Make sure to check your chicken before you take it out of the oven just to be safe. Chicken thighs are darker than chicken breast so it’s normal for it to look like this inside. I just grab a fork and tear it apart in the middle to make sure its not under cooked.

Step 2: Shred your chicken on a cutting board. You can use your hands or take two forks and just scrape away from each other. Pro tip- share a little with your fur baby šŸ™‚

Step 3: Run the lettuce under some water, pat it dry, then chop it up. Make sure you cut the bottom of the head off. I usually use one and a half lettuce heads and it makes me about four wraps.

Step 4: Combine all your ingredients in the bowl and use a pair of tongs or some forks to mix it all together. I also throw in some shredded Parmesan. Another thing you can add is croutons for a little extra crunchiness.

Step 5: Lay a large piece of plastic wrap down, put your tortilla on it, then add your salad mixture on top of the tortilla. I use a large plastic container to store all my wraps for the week. These are delicious and perfect for when i’m in a rush! I hope you guys like this and give it a try!
